开胃又解暑的夏日饮品——大米米酒

夏日难熬，即便是水汽横流的梅雨季，空气中厚重绵长的湿热，还是让腺体发达的皮肤无奈地舒展，释放出粘腻的汗水——伏期再一次到来了。避暑的方法除了躲在空调房里，夹杂着让机器过滤过的空气的冷气，肆无忌惮地入侵身上张开的毛孔外，用家家户户都有的大米酿制一份甜酒，在汗流浃背之时从冰箱中取出，一饮而尽，让身体感受久旱逢甘霖的畅快，岂不快哉！

桥本爱在日本治愈系电影《小森林》中过着世外桃源般的自给自足的生活，用最脱俗的心和最天然的食材，烹制出了一道又一道令人向往的美味。

小雷在受到其中利用大米粥加酒曲酿酒的启发，也曾购酒曲、酵母，如法炮制，然因酒曲撒量过多，造成酸涩难忍，故倾而倒之；后经多方查询，得到通过蒸大米饭后制酒的方法，再试甜酒制法，无奈因器皿除菌不利，发酵过程未密封，导致黑色霉菌滋生，再度作废。

不知不觉日已入伏，申城气温稳定于31度之上，又到了酿米酒的最适时节。积累过两次失败经验之后，小雷第三次尝试大米酒酿制，终于在发酵后第三天收获了甘甜滑爽的成品。

下面即自家酿酒的经验之谈，客官请听好~

原料：新蒸大米饭500克、酒曲适量

第一步

50克大米淘好后放入电饭煲蒸熟，同时备用于盛放米饭的器皿（玻璃器皿或瓦罐较好），通过开水杀菌等方式保证其处于无菌状态。米饭蒸好后，移至器皿中进行自然降温至35摄氏度左右（比手温略高），撒入适量酒曲并充分搅拌。（酒曲可购买，小雷所购为安琪甜酒曲，一包可用于2000~2500克米，故500克仅投放四分之一包即可）。酒曲与米饭充分混合后，在米饭中央用筷子或饭铲戳出空缺，方便观察出酒情况，并将器皿用保鲜膜密封，放置于31摄氏度以上的环境中。

第二步

待发酵两天左右，观察器皿中的出酒高度，与米时即可揭开保鲜膜。

第三步

将发酵好的米酒，分批放入带有过滤纱布的盆中，通过将布包裹住米饭反复挤压的方式，将米饭中的酒充分滤出。

第四步

将过滤出的米酒装入瓶中，盖好盖后放入冰箱冷藏。

中丰，活气养血、滋阴补肾的功能也会随着米酒下肚而迅速get~又能消暑解渴，可谓一举两得哦~~

温馨提示：

1、由于大米吸水量较大，故无需像用糯米做酒一样加凉开水，蒸熟后直接撒曲即可。

2、切忌在制作过程中保证所有器皿和用具的无菌性，通过清洁剂清洗、烧开水烫杀等方式现，并清洗双手后擦干，防止生水或油与米饭接触。

3、根据小雷的经验，酒曲与米饭混合均匀后必须用保鲜膜密封，一旦空气中的其他杂菌入侵，让米饭变得五颜六色，将导致前功尽弃。
