中国是一个在饮食文化上很有渊源的国度，早餐供给的豆浆油条成了中国特有的文化。很多人都是从小在这种文化的熏陶下长大，几乎都有早餐吃豆浆和油条的情结。还记得小时候油条才2毛钱一根，如今已经涨到1块钱了，不禁感叹这物价上涨的速度都赶上飞机飞的速度了。本来1块钱一根就已经有点小贵了，最近网红的油条竟然4块钱一根，还有那么多人排队等着要买，真是贫穷限制了我的想象力了。好奇心强大的我上周末很早起来跑去这家网红的早餐店吃油条，终于把他们的做法学到了，下面就和大家一起分享下吧。

原料：

普通粉5000克、盐比例相同、碱(冬季60克，春季70克，夏季85克)、温水(冬季3000克，夏季2750克)

做法：

1.将碱、盐按比例兑好，碾碎放入盆内，加入温水搅拌溶化，成乳状液，并生成大量的泡沫，且有响声，再加入面粉搅拌成雪花状，揣捣使其成为光滑柔软有筋力的面团，用温布或棉被盖好，醒20至30分钟，再揣捣一次，再叠面，如此3至4次，使面团产生气体，形成孔洞，达到柔顺。

2.案板上抹油，取面团1/5放在案板上，拖拉成长条，用小面杖擀成1厘米厚、10厘米宽的长条，再用刀剁成1.5厘米宽的长条，将两条摞在一起，用竹筷顺长从中间压实、压紧，双手轻捏两头，旋转后拉成长30厘米左右的长条，放入八成热的油锅中，边炸边翻动，使坯条鼓起来，丰满膨胀酥脆，呈金黄色即成。

3.在油条快要成型的时候切开一道口，将鸡蛋打入，随后在翻个身直至熟透。

油条是否能炸得又松、又脆、又黄、又香，制作要领是：

1.每两条上下叠好，用竹筷在中间压一下;

2.不能压得太紧，以免两条粘连在一起，两条面块的边缘绝对不能粘连;

3.也不能压得太轻，要保证油条在炸得时候两条不分离;

4.旋转就是为了保证上述要求，同时在炸得过程中，容易翻动。双手轻捏两头时，应将两头的中间轻轻捏紧，在炸的时候两头也不能分离。

看完之后，有没有冲动自己也炸一锅油条来吃啊，其实炸油条是一个需要耐心的活，可以在周五的晚上发面，经过一夜发酵，周六早晨睡个懒觉起来之后再炸。炸的时候注意把握油温，不要太高，不然容易炸的老就不好吃了。最重要的在油条快要成型的时候切开一道口，将鸡蛋打入，随后在翻个身直至熟透。这样在家就可以吃到4块钱一根的油条了，这种成就感绝对是买油条的时候体会不到的。
