有人说长在猪身上最尖端部位的东西是最好吃的，因为那些是“活肉”。比如走动的猪蹄、摇动的尾巴、张合的嘴巴以及煽动的耳朵。特别是猪耳朵，一只把脆骨、肥肉、瘦肉完美融合在一起的耳朵。经过卤煮，油亮中带着香腴，柔糯中带弹脆，是夏天佐酒的美味。

妈妈就特别的喜欢吃卤味，她不想做菜的时候就在外直接买点卤菜回来，她说就喜欢那个味道。自从大叔在家做了一次卤耳朵之后，老妈再也没有去外面买了，说大叔做的比买的还要好吃。拌猪耳丝是将熟猪耳切细丝，与椒末、盐、酒、麻油拌就可以啦！今天大叔下厨房教你做好吃的卤猪耳朵，绝对是道下酒菜！

猪耳朵 1-2个、生抽适量、老抽适量、白糖一小勺、黄酒适量、盐适量、桂皮 1根、八角 2-3个、葱适量、姜适量、干辣椒随意

1、首先将猪耳朵洗净，去干净毛备用即可；

2、然后将猪耳朵焯水，并冲洗干净备用即可；

3、接着放入锅中，加足清水，所有的食材一并放入，大火煮开，撇去浮沫，盖上锅盖后改小火；

4、然后熬煮大概半个小时左右，用筷子可以戳穿耳朵最厚实的部位就是煮好了，把火关了，焖上十几二十分钟即可；

5、焖好用筷子捞出来，晾凉备用即可；

6、最后把卤好的猪耳朵，切成长条、烹炒、凉拌都可以，大叔个人喜欢切条，这样吃起来更爽！

大叔小提示

1、卤汁撇去残渣，可以重复使用，我一般会保留一小保鲜盒放在冰箱；

2、剩余的卤汁还可以卤猪手、鸡爪、炒菜，做火锅底料，又能变成一道下饭菜啦！
