众所周知，喝葡萄酒前需要醒酒，过程就是把酒从酒瓶倒入一个大的玻璃器皿中，在此过程中给酒“换气”。那么问题来了，我们日常生活中喝到的酱香酒需要醒酒吗？很多酒友对这个问题有着不同的见解，其实，酱香酒和葡萄酒一样，都是需要醒酒的。

为什么需要醒酒呢？

一、醒酒可以帮助恢复香气，口感更好：长期喝酒的朋友都知道陈年酱香酒被长时间封藏在酒瓶中，口感比较醇厚，在刚被开启的那一瞬间，酒液集中度非常高，如果心急的朋友马上就品尝，入口会感觉紧梆梆，也没有那种醇厚的口感。因为有些白酒在年轻时，香气会呈现密闭状态，而与空气充分接触后，香气才能慢慢恢复过来。

通俗的说，就像塞在箱子里过完整个夏天的冬装，刚从衣柜拿出来的时候多半是皱巴巴的，穿在身上不好看不说，自己也觉得浑身不舒服，这时候更需要在穿之前把衣服拿出来晒晒。酒也一样，需要一个与外界适应的过程，有助于恢复之前的口感。

二、去除部分沉淀：醒酒换瓶能除去陈年老酱香酒多年累积的沉淀，避免酒液中残留酒石酸沉淀物，影响酒的口感。

三、去除异味：一些酱香酒在酿造过程中为杀灭细菌会添加过量二氧化硫，从而容易形成还原性的硫臭、臭鸡蛋味等，醒酒过程中，这种不悦的味道会快速消失。

那什么样的酒需要醒酒呢?

一、体态重的酒

体态重的酒，复杂且单宁重，比如葡萄酒。体态重的酒在没有完全成熟的时候喝，如果不醒酒，它迷人的果香和多种风味是很难散发出来，这就会对酒的口感大打折扣。

二、陈年的老酱香酒

醒酒时间不宜太长，把酒倒入醒酒器中醒10来分钟。一般来说，选用100-200ml的分酒器最为合适。老酒醒酒主要是为了将酒中陈年的木塞醒酒专用容器和轻微的氧化味去除，但老酒还需要换瓶去渣。在换瓶的过程中它会更多地接触到氧气，增进清醒，所以醒酒时间不要太长。
