几款做法简单的家常菜做法, 准备好开吃了吗?

酱爆肉丁

食材：猪瘦肉、青椒丁、冬笋丁、虾仁、豆腐干丁、香菇丁、红萝卜丁、油炸花生米

调料：鸡蛋清、湿淀粉、葱姜片、甜面酱、酱油、料酒、高汤少许

做法：

1.将肉切成小丁，放入碗内，加鸡蛋清，湿淀粉抓均

2.再将其他原料切成小丁，用沸水焯后捞出用凉水冲凉

3.炒锅内放入油，中火烧至五成热，放好肉丁，滑至7成熟，倒入漏勺沥油

4.留少许油，放入葱姜片炒出香味，加甜面酱炒香

5.再加入酱油，料酒，高汤少许快速搅动翻炒

6.快熟时撒上油炸花生米，淋上少许明油炒匀出锅即可。

双色剁椒鱼头

食材：大鱼头、红绿剁椒、盐、姜片、香菜、葱姜蒜末、糖、油、蒸鱼豉油

做法：

1.大鱼头一个，处理干净后用刀剖开，肉厚的地方用刀划几下

2.用个干净的盘子，盘底放些姜片和香菜去腥

3.处理好的鱼头放在盘子里，用料酒、盐、胡椒粉、葱姜蒜末腌制15分钟

4.腌制好的鱼倒出腥水，把剁椒分别铺上，撒上姜末、蒜末、葱花、少许糖

5.放入烧开水的蒸锅整10分钟即可出锅

6.稍微倒出些多余的汤汁，淋上一些蒸鱼豉油，重新撒上新鲜的葱花

7.锅里倒少许油烧热淋在剁椒上即可。

金针菇肥牛卷

食材：肥牛片一盒、金针菇一袋、芥兰 10颗细一些的（也可换作生菜）、青椒一个、红椒一个、蒜肉、绍酒、蚝油、美极酱油、水淀粉；白胡椒粉

做法

1.将金针菇去尾部，青红椒切丝，大蒜拍碎切蓉、芥兰切成3厘米的小段；用肥牛片包裹金针菇和青红椒丝卷起来；

2.锅放少许油，先放入芥蓝段；再放上卷好的金针菇肉卷；绍酒、美极酱油和盐调汁浇在牛肉卷上，大火烧开烹入绍酒出香味；盖上锅盖改成小火3分钟；

3.锅内放油煸香蒜蓉，倒入蚝油、糖、白胡椒粉、水淀粉调成芡汁。长盘摆放焯熟的芥兰段，将牛肉卷码放在上面将勾好的汁浇在牛肉卷上即可；
