超好吃的卤三鸡你知道是什么嘛？

鸡翅洗干净焯水（水开放食材进去煮至水再次沸腾，大概三四分钟即可），起锅用急自来水冲30秒，沥水备用；鸡蛋水煮至熟，剥壳备用。

焯水，就是将初步加工的原料放在开水锅中加热至半熟或全熟，取出以备进一步烹调或调味。

准备卤水配料，辣椒需要切断(桂皮、草果害羞没有入镜)

别私信问我什么是草果，什么是桂皮了，大家都是无所不能的好厨娘，可以自行百度一下。

鸡翅、鸡蛋以及卤水配料放小奶锅，先加淹没鸡翅鸡蛋一半的清水

加生抽4汤勺、老抽2汤勺、陈醋2汤勺、蚝油1汤勺、冰糖1汤勺、芝麻油1茶勺、盐(调整用)半汤勺(可不加)，加完所有调料应该刚好覆盖了鸡翅鸡蛋，如果还未覆盖，请继续添加清水至完全覆盖

汤勺是图片上的，具体一汤勺容量为多少我没具体量过

大火煮开转中小火煮30分钟，想软绵一点的可以多煮一会儿，直至自己喜欢的程度。

出锅前，试下咸度，试下咸度，试下咸度，便于做些调整。

请一定细心看心得，尤其是出锅前试下咸度非常必要！

最后简单摆盘就可以吃大餐啦~

1、鸡腿鸡翅灼水之后冲水，是为了鸡皮在后期的卤的过程中不至于破皮且能保持弹性；

2、鸡蛋、鸡腿在卤的过程中，还是建议中间破个洞，便于入味；

3、多余的卤汁，把渣渣过滤掉，煮开放凉，三五天要用可密封放冷藏保存，长时间不用密封放冷冻保存(每一个月必须拿出来解冻煮沸一次)，但是如果卤了羊肉，豆干，莲藕这些大气味的食物就只能冷藏放三两天了……

4、鉴于大家使用的锅具大小不同，建议在出锅前，试下咸度，便于做些调整；

5、菜谱中的食材也不局限在“三鸡”，还可以添加鸡脚、五花肉、豆干(豆干比较吸味，注意增减调味料)、土豆、芋仔等等，大家自由发挥；

6、好多小伙伴问我这个卤出来是不是都是这个色泽，我只能告诉你，色泽跟老抽生抽的品牌，和水分的多少，火力的大小（水分挥发问题）等都有密切关系…

7、生抽我一般用味极鲜，老抽、醋等等我都忘记当时的品牌了…
