白酒的勾兑即酒的掺兑、调配，包括基础酒的组合和调味，是平衡酒体，使之形成并保持一定风格的专门技术。它是曲酒生产工艺中的一个重要环节，对于稳定和提高曲酒质量以及提高名优酒率均有明显效果。现代化的勾兑是先进行酒体设计，按统一标准和质量要求进行检验，最后按设计要求和质量标准对微量香味成分进行综合平衡的一种特殊工艺。

一、勾兑的原理

在蒸馏白酒中，其成分98%左右是乙醇和水；另外还有上百种微量成分，它们量的总和不超过2%，其中相当部分含量虽微，但作用颇大。由于这些成分的存在，才使白酒有别于酒精。当它们在酒中含有一定的绝对量，并且成分之间以某种量比关系存在时，便决定了白酒的风格和质量。

白酒的生产，即使是同厂不同车间、同车间不同生产时间生产出的白酒，所含主要微量成分的量及其量比关系也会不一致，因此感官上质量不一，特点各异。要使酒体完美、风格突出，出厂产品的质量平衡、稳定，勾兑便必不可少，从本质上来讲，勾兑技术就是对酒中微量成分的掌握和应用。白酒的勾兑，讲究的是以酒调酒，一是以初步满足该产品风格、特点为前提组合好基础酒；二是针对基础酒尚存在的不足进行完善的调味。前者是粗加工，是成型；后者是精加工，是美化。成型得体，美化就容易些，其技术性和艺术性均在其中。

二、勾兑的作用

白酒的生产中采取自然接种制曲，生产过程中多是开放式的，因此影响白酒产量、质量的因素很多，造成酒质的不一致。如果不经勾兑加工平衡，按照自然存放的顺序灌装出厂，酒质就极不一致，批次之间的质量差别就非常明显，也就很难保持出厂产品质量的平衡、稳定及其独特风格。而通过勾兑，可以取长补短，弥补客观因素造成的半成品酒缺陷，改进并统一酒质和标准，保证酒质长期稳定。
