今天为大家送上麻麻辣辣麻婆豆腐的菜谱，小编精心制作~

这道麻婆豆腐是自己经常做的一道菜，有一些自己的做法和见解，因为豆腐本来很鲜，所以小编认为不必放酱油，希望能够依靠别的佐料去提升它本身的味道。

请准备这些食材：

南豆腐一份

肉末80g

色拉油

蒜苗

豆豉10颗

干辣椒，花椒

葱姜蒜

盐

鸡精

生辣酱

那么，开始吧!

这些食材对于这份菜谱来说缺一不可哦~

把切好块儿的豆腐放入开水中，焯一小会儿，去掉豆腥味；

锅里放油，不要太少，油热后放入肉末，翻炒使水分蒸发，肉末香酥；

把肉末拨到一边，放入豆豉（在这道菜中非常关键），干辣椒，花椒，葱姜蒜，香味炒出；

接着放一勺生辣酱（豆瓣酱也可），接着翻炒；

小编在这儿放的是生辣酱，是用夏天的红辣酱经过腌制做成的，会比豆瓣酱辣一些，做法以后会详细告诉大家；

翻滚吧红油~香料同肉末的融合，香气伴随着滋滋滋的声音，这是入味的开端呢；

放入豆腐块儿，再放蒜苗，轻一点炒，让每一块豆腐都均匀沾上调料，接着放少许盐（很少就行，辣酱本来很咸）；

让豆腐在锅里咕噜几分钟，轻轻地翻一下不要粘锅就行了，然后勾芡；

放半勺鸡精，芡汁已经发挥作用，汤汁稍微有些粘稠了，各种主料佐料的味道刚好达到极致，豆腐入味完成！好啦，关火；

盛出来~撒上葱花~花椒粉~花椒粉放多一些更好吃，麻麻辣辣；

蒜苗青绿，豆腐白嫩，汤汁红亮；

米饭当然不可缺少，麻，辣，鲜，香，下饭极品啦~
